I don’t know about you, but sometimes I want it to seem like I spent a great deal of time in the kitchen preparing a meal, but I am tired and don’t want to spend that much time in the kitchen. Please tell me I am not the only one.

Breakfast for dinner is always one of my fallback dinners when I just don’t have the mental energy to think of something to make for dinner and I don’t have the physical energy to spend much time cooking.

I made these “Fancy Pancakes” one night and the boys were asking me for the recipe to take to college with them. I knew I had a hit.

3 Ingredients is all it takes. Martha White muffin mix (in the video I say pancake mix. Oops, sorry. Real life.), 1 egg, and 2/3 cup of milk. That is it!

If I have some bananas that are going a little mushy, I will put those in with the banana nut mix, but other than that I don’t add anything else. I don’t like bananas, unless it is banana taffy taffy, but the banana nut smells heavenly while it is cooking.
